A quarter beef carcass typically weighs between 150 and 195 pounds. Processing costs about $270/quarter. At $2.50/lb expect to pay $650-750 for a cull cow. At $3.50/lb expect to pay $800-950 for young stock.
Take home meat typically yields between 55% and 65% of the carcass weight. This will vary depending upon the fatness of the animal, the type of cuts you select (bone in cuts will result in a higher yield), and many other factors. We've had skinny bulls yield 72%! Taking an average of 60%, you can expect to receive 90-115 pounds of meat in a quarter cow.
For an average cull cow the price will be about $7/lb.
For an average young beef the price will be about $8/lb.
A cull cow is an older animal often older than 7 years. She will normally have a smaller carcass than a steer. Being older, her steaks will be tougher, and they are often best cooked in a crockpot rather than grilled.
A young beef is a steer or heifer that is younger than 30 months old. These animals normally go to the butcher at 18-24 months old. The meat will be more tender, and will be better for grilling.
